The wheat for this fine whiskey is grown within a few miles from our distillery by local farming neighbors. We mill it at the distillery, mash it to extract its sweet starch and ferment it ‘on-the-grain’ to capture all of its delicate flavor components. The wort is then double distilled in our copper pot still and only the purest middle cuts are set aside in charred American white oak barrels that will produce the finest, richest spirit. The light and uniquely pleasant flavor of this straight Wheat Whiskey is a remarkable departure from the few other wheat whiskeys available today.
